This is a key ingredient for making silky tofu dessert, known as Tofu Fa (豆腐花) which is served as a dessert in most Cantonese speaking areas, otherwise known as Dou Hua (豆花)and Doufu Nao (豆腐腦)which can be sweet or savoury in the northern parts of China.
How to make silky tofu pudding:
- Boil 3000cc unsweetened soy milk (store bought or homemade).
- Mix one packet soybean pudding mix (30g) with 300cc cold water till completely dissolved. Pour into the container in which you will be making the tofu pudding.
- When the soy milk reaches 85 degrees, pour it into the soybean pudding mix. Key is to pour it quickly at one go otherwise it will not set properly.
- Cover container with lid and set aside for 40 minutes ( note: do not move the container) and serve.
