Aiyu is a natural jelly that comes from the seeds of a type of fig which is grown high up in the Alishan mountain and is not commonly found outside of Taiwan. Aiyu jelly is usually served in a cold drink with lemon juice and honey but can be added to other sweetened beverage or shaved ice. A staple of Taiwan’s night markets, you can now make this at home and enjoy it before your next trip to Taiwan!
How to make Aiyu jelly:
Put the Aiyu seeds in the cloth bag and submerge it into 3000cc water. Gently rub the Aiyu seeds for 7-8 minutes but be careful not to overdo it. Remove the bag from the water and let the remaining liquid rest for 30 minutes until it sets.
